Grains Information Page

We stock fresh grains. Some grains are in plastic bags, others are packaged in air tight containers to retain freshness and keep the moisture and insects out. We carry chemical free, GMO free, and organic grains.

The reason why we sell mostly chemical free,GMO free, organic grains is due to the fact that non-organic grains often packaged by huge volumes and are stored sometimes for many years in non-ventilated warehouses to save on energy costs during the hot summer months.
This practice compromises not only the nutritional value of the grain but also the taste of the finished product.
Our organic grains are certified organic and are never kept for longer than one year. All our containers of grains have lot numbers imprinted on them for inventory purposes. Most grains are harvested sometime in the early or late fall and delivered to us shortly after the harvest.

A brief description of each type of grain follows.

Hard Red Wheat- Is the most traditional and preferred wheat used for most yeast breads. Quality farm fresh comes in a 6 Gallon air tight 45lb. buckets or 50lb. double plastic bags.

Hard White Golden 86 Wheat- This is a more recent development of hard white wheat, compared to hard winter red wheat in nutritional value. It has more nutritional vaule and it produces lighter colored yeast breads softer texture. It also has a very pleasing flavor. Comes either in 6 gallon 45lb. air tight buckets or 50lb. double plastic bags.

Millet Hulled- is small, round, ivory colored seed. It is easily digested and is rich in B vitamins, potassium, phosphorus, magnesium, iron, zinc copper and slightly lower in amino acids than wheat. Like wheat, millet contains enough protein to still be considered a good protein source. Millet is gluten free grain and is good alternetive for people with wheat allergies. It can be ground into flours and used for flat breads, or mixtured with whole wheat receipes. Comes in a 6 gallon 43lb air tight buckets.

Barley Hulled- It is high is soluble fiber and can reduce blood cholesterol and stabilize blood glucose levels. Barley is also low in fat and contains vitamin E. You can make barley flour with either hulled, or pearl barley through a grain grinder. Comes in a 6 galllon 40lb. air tight bucket.

Rye-is has many characteristics of a wheat seed but is a little less plumped, slightly longer and is grayer in color. Although rye has some gluten, it's not enough to make good breads, and must be used with other gluten flours. Nutritional Rye is high in riboflavin, folacin and pantothetic acid and higher in fiber content than wheat. It has many uses and is well known for breads, crackers and often used for cracked cereals or rolled into flakes. Comes in 6 gallon 42lb. plastic bucket.

Whole Corn (Yellow dent)- Get it's name from the inward "dent" on each side of the kernel. The yellow relatively soft, inner starchy layer grinds nicely into a powder. It can be used as a cornmeal or added into other flours. Comes in a 6 gallon 40lb air tight bucket.

Oat Groats- kernels has a outer layer of bran that is still intact after the de-hulling processes, which protects the inner nutrients of the oat. They are rich in B,E, vitamins, and contain anti-oxidants. It is high in insoluble fiber and has 4 times the fatty acids then wheat. Oats are considered "cleansing grains" not only cleansing your intestinal tract but your blood as well. You can run oat groats through your grinder to get flour suitable for baking. Comes in 6 gallon 42 lb. plastic air tight bucket.

Spelt- Has been known and used back in Europe for centuries. Brought to the America by popular demand of immigrants. It has a pleasing nutty flavor and rises equally as well as common wheat. It's easily digestable and many who are allergic to wheat can tolerate spelt with ease. Quality farm fresh comes in 6 gallon 42lb. plastic air tight bucket.

Kamut- Introduced to the U.S. in 1949 when a airman from a farm in Montana received 36 kernels believed to have come from Egypt. It's popularity spread and is now used in whole wheat bread receipts, it makes soft like textured bread although it doesn't raise as high as other wheat. Compared to wheat it has the highest protein contents packed with minerals such as magnesium, zinc with Vitamin B and E.
Many who are allergic to wheat can tolerate Kamut. Quality farm fresh grains comes in 6 gallon air tight plastic bucket.

Buckwheat, Hulled- Is commonly used in flour mixes for pancakes, waffles or to add texture to breads and other baked goods. It has a distinctive nutty flavor that can be quite pleasing. It can be contrasted with other, more mild flours. Buckwheat has a high fat content.

Quinoa- isn't a grain at all but is technically a fruit. The Incas call it the Mother Grain by eating this food tended to give long life. Quinoa seed is small and oval and is one of the few foods with relatively balanced protein. Quinoa's high lycine complements wheat nicely by mixing into wheat at a ratio 25% Quinoa to 75% makes your wheat breads a complete protein. Comes in 88 oz. can, or 6 gallon 45lb. plastic air tight bucket.

Brown Rice- Is rice which has not been hulled, leaving the outer layer of bran on the grain. There are three parts to rice: the outer layer known as bran, the inside bran called the germ and the endosperm that makes up the body of the grain. Brown rice is high in natural fats and oils as a result is more prone to going rancid. You should refrigerate until used, and should ideally be used within 6 months of purchase.Comes in 6 gallon, 43lb plastic air tight bucket.

Soybeans-Occur in various sizes and in several hull or seed coat colors including brown ,black, blue, yellow and mottled. Soybeans have very high levels of protein, three to 4 times as high as red meat! The oil and protein content together account for 60% of the dry soybeans weight. The remainer consists of 35 % carbohydrate and 5 % ash. It's nutritionally high in Omega-3, Isoflavones, vitamins and minerals. The heat stability enables soy foods products requiring high temperture cooking such as soymilk, textured vegetables protein and soy flour to be made. There are many uses for soybeans, and is considered a powder house food. It is the preferred grain for diabetics because of it's low glicemic index rating. A very good "protein snack" is made as follows:
In a bottomless pan, put one cup of finely ground soy flour, add 3 cups of cold watter. Cook on a low temperature for 1-2 hours. Mix occasinally. Before consumtion add some Splenda or sugar free syrup

Comes in a 6 gallon 40lb. plastic air tight bucket.
